Job Description
Job Title : Chef De Partie (CDP)
Openings for the role of *CDP - Bread/Pastry/Brownie & Hot Kitchen*
Experience : Minimum 2 to 3 years as DCDP
Location : Govandi East, Mumbai
Work Setup : Central Kitchen (CK)
Shift Timings : 9 hours Shift ,6 Days Working
Key & Responsibilities :-
- Prepare pastries, brownies, cakes, and bakery products as per standard recipes and production schedules.
- Ensure consistency in taste, quality , and presentation of all products.
- Maintain hygiene , food safety, and cleanliness standards in the kitchen.
- Monitor ingredient usage and follow FIFO and proper storage practices.
- Coordinate with the kitchen team to ensure timely production and dispatch.
- Assist in inventory checks and minimize wastage.
- Follow company SOPs and food safety standards.
JD For CDP - Hot Kitchen :
- Handle the day-to-day operations of the Hot Kitchen section smoothly and ensure food is prepared on time.
- Follow standard recipes, cooking methods, and presentation guidelines to maintain taste and quality consistency & minimize wastage.
- Ensure proper preparation (mise-en-place) of vegetables, sauces, meats, spices, and other ingredients before service starts.
- Supervise and guide Commis chefs and kitchen helpers during food preparation and service.
- Prepare dishes like *Soups and broths, Gravies, sauces, and curries, Indian main course dishes, Continental hot dishes, Pasta and saut items, Sandwich fillings, Savory fillings, Appetizers and hot snacks*
- Check food quality, taste, freshness, and portion sizes before food is served.
- Maintain cleanliness and hygiene in the kitchen area as per food safety and HACCP standards.
- Coordinate with Sous Chef and kitchen management for stock availability and ingredient ordering.
Requirements :
Diploma/Degree in Culinary Arts or Bakery & Pastry preferred.
DCDP : 3 to 5 years experience in bakery/pastry production.
*Experience in central kitchen or high-volume production preferred.
*Good knowledge of pastry, brownie, and bakery production.
*Ability to work in a fast-paced environment.
